As a 2nd generation Sicilian, food, family, and friends have always played an integral role in my life. My passion for cooking began when my grandma Rosati, who inspired me since the age of eight, helped me realize that I was born to enjoy creating in the kitchen. Self-taught, I began to experiment and develop my own culinary creations at age sixteen.
In 2008, I decided to follow my passion and enrolled in the French Pastry School of Chicago. The introductory course in chocolate was just the beginning… I immediately fell in love with everything that was involved in creating a fine chocolate. The techniques and precision demand the skill of a master artist, while my intuitive ability to understand the chocolate allows me to be creative and magnifies my passion for life.
As an absolute romantic, I found the development of my “Sixth Sense Collection” was like dealing with a temperamental lover. If the conditions were not just right, all the time and effort spent was for nothing. But with the right amount of patience and care, the results of a fine chocolate illuminates its beauty with a glass-like sheen that tells the Chocolatier it’s perfect…just like True Love.
It is this feeling that I intend to share with you through my chocolates. Just like a fine piece of art, the flavor, aroma, and shape of the chocolate is designed to complete a picture; it’s an escape to experience the passions of life in the most beautiful way.
